Strawberry Rhubarb Topping

Ingredients:

  • 1 lb. rhubarb, cut into 1” pieces
  • 1 lb. strawberries, cut into quarters
  • 2 T. honey
  • 1 T. water
  • Angel Food Cake
  • Whipped Cream

Instructions:

  1. Bring all ingredients to a boil in a saucepan. Lower heat to medium and simmer until the fruit is soft and the mixture has thickened, about 25-30 minutes. 
  2. Serve over angel food cake and top with whipped cream.
